Ingredients

For the Onions

  • 2 large yellow or sweet onions
  • 1 tbsp olive oil for initial roasting

For the Garlic Butter Boil Sauce

  • 4 tbsp unsalted butter melted
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano or thyme
  • Salt and black pepper to taste
  • Optional: A pinch of cayenne pepper for heat

For Serving

  • 2 cups cooked basmati or jasmine rice
  • Fresh parsley for garnish

Instructions

  • Peel the outer papery skin off the onions and slice a tiny bit off the bottom so they sit flat, then cut a small well into the top center of each onion.
  • Place the onions on a piece of aluminum foil or in a small baking dish and drizzle them lightly with olive oil.
  • In a small bowl, whisk together the melted butter, minced garlic, paprika, oregano, salt, pepper, and cayenne until the spices are well distributed.
  • Pour about half of the butter mixture into the center wells of the onions and over the sides, letting it coat the outer layers.
  • Wrap the onions loosely in the foil or cover the dish and bake at 400°F for 30 minutes to soften the core.
  • Open the foil or remove the cover, pour the remaining garlic butter sauce over the onions, and bake for another 15 minutes uncovered until golden brown.
  • Check that the onion is tender by piercing it with a knife; it should slide in with almost no resistance.
  • Remove from the oven and let the onions rest for two minutes so they soak up the extra butter sauce from the bottom of the dish.

Notes

Tips & Variations: For an "Extra Bold" version, add a teaspoon of Worcestershire sauce or liquid smoke to the butter mixture.
Substitutions: You can use red onions for a slightly sharper flavor or shallots for a more delicate, bite-sized version of this dish.
Storage/Freezing: Store leftovers in an airtight container for up to 3 days; they reheat beautifully in the microwave or air fryer.
