  • 2 cups red seedless grapes
  • 1½ tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Pinch of salt
  • Fresh thyme optional

For the Whipped Brie Dip

  • 10 oz 280 g brie cheese, rind removed (or leave rind on for more earthiness)
  • 2 –3 tbsp cream cheese or mascarpone
  • 1 tbsp honey
  • 1 –2 tbsp milk or cream as needed for texture
  • Pinch of salt

For Serving

  • Toasted baguette slices
  • Crackers
  • Apple slices
  • Pecans or walnuts optional
  • Fresh thyme or rosemary

Instructions

Prepare the Grapes

  • Preheat oven to 400°F (200°C).
  • Toss grapes with olive oil, balsamic vinegar, honey, and a pinch of salt.
  • Spread on a parchment-lined tray.
  • Roast for 12–15 minutes until grapes burst, caramelize, and release juices.

Prepare the Brie

  • Remove rind if you prefer a smoother dip.
  • Cut brie into chunks for easier blending.

Whip the Brie

  • Add brie, cream cheese (or mascarpone), honey, and a splash of milk to a blender or food processor.
  • Blend until smooth, creamy, and luscious.
  • Adjust consistency with a little more milk if needed.

Warm the Dip

  • Transfer whipped brie to an oven-safe dish.
  • Warm for 5 minutes in the oven, until soft and melty (do not overheat).

Assemble

  • Spoon roasted balsamic grapes and their juices over the top of the warm whipped brie.
  • Garnish with fresh thyme or rosemary.

Serve

  • Serve immediately with toasted baguette slices, crackers, fruit, or nuts.

Notes

Tips & Variations

Tips
  • Use high-quality brie for the best flavor.
  • Leave some grapes whole for bursts of sweetness, let others burst for syrupy juices.
  • Don’t overheat the whipped brie or it may split — a short warm-up is enough.
  • Rind on = more intense, earthy brie flavor; rind off = smoother, milder dip.
Variations
  • Add garlic: Whip in ½ clove roasted garlic for savory depth.
  • Add herbs: A touch of thyme or rosemary blends beautifully into the dip.
  • Make it spicy: Add a drizzle of hot honey over the top.
  • Nutty twist: Top the dip with toasted walnuts or pecans.
  • Berry version: Use roasted blueberries or cherries instead of grapes.

Storage

  • Fridge: Store leftovers for up to 2 days.
  • Freezer: Not recommended — brie loses its creamy texture.
  • Reheat: Warm gently at 250°F (120°C) until creamy again.
