- 200 g 7 oz cream cheese, softened
- 50 g 3½ tbsp unsalted butter
- 100 ml ⅓ cup + 1 tbsp milk
- 6 large eggs separated
- 120 g ½ cup + 2 tbsp sugar, divided
- 60 g ½ cup cake flour
- 20 g 2 tbsp cornstarch
- 1 tsp vanilla extract
- ¼ tsp salt
- Powdered sugar optional for dusting
Preheat the oven to 160°C / 320°F. Line a baking pan with parchment paper and prepare a water bath.
In a saucepan over low heat, gently melt the cream cheese, butter, and milk together, stirring until completely smooth. Remove from heat and let cool slightly.
Whisk in the egg yolks one at a time, followed by the vanilla extract.
Sift in the cake flour and cornstarch, mixing until the batter is silky and lump-free.
In a clean bowl, beat the egg whites with salt. Gradually add the sugar and beat until soft peaks form.
Gently fold the egg whites into the batter in three additions, using a light hand to preserve the airiness.
Pour the batter into the prepared pan and tap gently to release large air bubbles.
Place the pan into the water bath and bake for 60–70 minutes, until set but still jiggly in the center.
Turn off the oven and leave the cheesecake inside with the door slightly open for gradual cooling.
Chill before slicing for the best texture and clean cuts.
Tips & Variations
- Add lemon zest to brighten the flavor without overpowering the cheesecake
- Swap vanilla extract for vanilla bean paste for a deeper aroma
- Serve with fresh berries or a light fruit coulis for contrast
- Works beautifully in both round and square pans
- Always use a water bath to achieve maximum lift and prevent cracks
Storage
- Store in an airtight container in the refrigerator for up to 3 days
- Best enjoyed chilled for optimal texture
- Not recommended for freezing, as the airy structure may collapse
