  • 12 large sea scallops patted dry
  • 4 slices bacon or pancetta finely chopped
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp lemon juice
  • Fresh chives chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  • Prepare the Bacon: In a skillet, cook bacon or pancetta until crispy. Remove and drain on paper towels.
  • Sear the Scallops: Pat scallops very dry and season with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Once hot, sear scallops for 1½–2 minutes per side, until golden brown and opaque in the center.
  • Assemble & Garnish: Place scallops on a serving platter or appetizer spoons. Top with crispy bacon, drizzle lightly with lemon juice, and finish with chopped chives. Serve immediately for the best flavor and texture.

For a lighter version, use turkey bacon or sear in ghee.
