Ingredients

The Aromatics

  • 1 head Garlic for roasting
  • 1 tsp Olive oil for roasting
  • 1/2 tsp Ground white pepper

The Base

  • 1 cup High-quality mayonnaise
  • 1 tbsp Fresh lemon juice
  • 1/4 tsp Salt to taste

Instructions

  • Preheat your oven to 400°F and prepare a small piece of aluminum foil to wrap your garlic head.
  • Slice the very top off the head of garlic to expose the individual cloves, then drizzle with olive oil and a pinch of salt.
  • Wrap the garlic tightly in the foil and roast for 35 to 40 minutes until the cloves are golden brown and very soft.
  • Allow the garlic to cool slightly before squeezing the jam-like cloves out of their skins and into a small mixing bowl.
  • Use a fork or the back of a spoon to mash the roasted garlic cloves into a completely smooth, uniform paste.
  • Add the mayonnaise, fresh lemon juice, ground white pepper, and salt to the bowl with the garlic paste.
  • Whisk the ingredients together vigorously until the sauce is creamy and the garlic is evenly distributed throughout.
  • Taste the mayo and add an extra pinch of white pepper or lemon juice if you prefer more warmth or zing.
  • Transfer the mayo to a clean glass jar and refrigerate for at least half an hour before serving to allow the flavors to bloom.

Notes

Tips: If you're in a rush, you can roast the garlic a day in advance and store it in the fridge.
Substitutions: For an extra-rich version, use half mayonnaise and half Greek yogurt or sour cream.
Storage: Keeps well in an airtight container in the refrigerator for up to one week.
