For the Turkey:
- 1 whole turkey 12–14 lbs, thawed
- 1 cup unsalted butter softened
- 2 tbsp fresh rosemary chopped
- 2 tbsp fresh thyme chopped
- 2 tbsp fresh sage chopped
- 6 garlic cloves minced
- Zest of 1 lemon
- Salt and freshly ground black pepper
For the Cavity:
- 1 onion quartered
- 1 lemon halved
- 1 apple quartered
- Fresh rosemary thyme, and sage sprigs
For Roasting:
- 3 cups chicken broth
- 4 carrots chopped
- 4 celery stalks chopped
- 1 onion chopped
- 1 lb baby potatoes
- Olive oil
Optional: Homemade Gravy
- Turkey drippings
- 2 tbsp flour
- 1 cup chicken broth more as needed
Preheat the Oven – Preheat oven to 325°F (163°C).
Prepare the Herb Butter – In a bowl, mix softened butter, garlic, lemon zest, rosemary, thyme, sage, salt, and pepper until combined.
Prep the Turkey – Pat the turkey dry with paper towels. Gently loosen the skin over the breast and thighs. Rub the herb butter underneath the skin and all over the outside of the bird.
Stuff the Turkey – Fill the cavity with onion, apple, lemon halves, and fresh herb sprigs.
Prepare for Roasting – Place chopped carrots, celery, onion, and potatoes in the bottom of a roasting pan. Drizzle with olive oil and pour in 2 cups of chicken broth. Set the turkey on a rack above the vegetables.
Roast the Turkey – Roast uncovered for about 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste every 45 minutes with pan juices and add more broth as needed.
Rest & Carve – Remove from oven and let rest for 30 minutes before carving to lock in juices.
Make the Gravy (Optional) – Strain the pan drippings. In a saucepan, whisk flour with 2 tbsp fat from drippings over medium heat. Slowly add broth and remaining drippings, whisking until smooth and thickened.
Tips:
- Let the turkey sit at room temperature for 30 minutes before roasting.
- Use a meat thermometer — don’t guess doneness.
- Tent with foil if the skin browns too quickly.
Variations:
- Apple Cider Brine: Soak the turkey overnight in apple cider brine for extra moisture.
- Spicy Herb Butter: Add crushed red pepper for a kick.
- Herb Swap: Try oregano, marjoram, or tarragon for a unique flavor twist.
Storage :
- Cool Before Storing: Allow the chicken to cool fully before packing it away. This prevents steam from creating excess moisture that can thin out the glaze.
- Refrigerate Safely: Transfer the chicken to an airtight container and refrigerate for 3–4 days. Keeping it sealed helps preserve its tenderness and citrus-cranberry flavor.
- Freeze for Longer Storage: Place leftovers in a freezer-safe container or bag, adding a spoonful of the glaze to keep the chicken moist. It can be frozen for up to 2 months without losing quality.
- Thaw Properly: When reheating from frozen, thaw the chicken overnight in the refrigerator to maintain a smooth texture and even heating.
- Reheat Gently: Warm the chicken on the stovetop over low heat, adding a splash of water or leftover glaze to restore the glossy coating. Avoid high microwave heat, which can toughen the meat.
