Ingredients

Potatoes & Frying

  • 4 large russet potatoes
  • Vegetable oil for frying

Seasonings

  • Salt to taste
  • Black pepper to taste
  • Cajun seasoning homemade or store-bought

Sauce

  • 1 cup mayonnaise
  • 2 tablespoons hot sauce adjust to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Garnishes & Toppings

  • Fresh parsley chopped
  • Optional: shredded cheese cheddar or pepper jack
  • Optional: chopped green onions

Instructions

Prepare the Potatoes

  • Wash and scrub the russet potatoes thoroughly. Cut them into thick fries or wedges for that signature voodoo-style look.

Soak for Extra Crispiness

  • Place the cut potatoes in cold water and soak for at least 30 minutes. Drain and pat completely dry—this step is key for crispy fries.

Heat the Oil

  • Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).

Fry the Potatoes

  • Fry the potatoes in batches for 5–7 minutes until golden and crispy. Remove and drain on paper towels.

Season Immediately

  • While hot, toss fries with salt, black pepper, and Cajun seasoning.

Make the Spicy Sauce

  • In a bowl, whisk together mayonnaise, hot sauce, lemon juice, garlic powder, and onion powder until smooth.

Assemble the Fries

  • Spread fries on a serving platter. Drizzle generously with the spicy sauce.

Add Cheese (Optional)

  • Sprinkle shredded cheese over the fries and place under a broiler for 1–2 minutes until melted.

Garnish & Serve

  • Finish with chopped parsley and green onions. Serve immediately.

Notes

Tips & Variations

  • Extra crispy fries: Double-fry the potatoes for ultimate crunch
  • Baked version: Bake at 425°F (220°C) for 35–40 minutes, flipping halfway
  • Air fryer option: Cook at 400°F (205°C) for 15–18 minutes
  • Cheese lovers: Add both cheddar and pepper jack
  • Milder flavor: Reduce Cajun seasoning and hot sauce

Storage

  • Fridge: Store leftover fries separately from sauce for up to 2 days
  • Reheat: Oven or air fryer at 400°F (205°C) to restore crispiness
  • Freezing: Not recommended once assembled
