Ingredients

Produce

  • 5 ⅓ oz chickpeas drained + rinsed
  • 4 ¼ oz dates

Condiments

  • 2 tbsp agave syrup
  • 2 tbsp peanut butter

Baking & Spices

  • 2 tbsp cocoa powder
  • 1 pinch salt

Nuts & Seeds

  • ½ cup peanuts dry roasted & unsalted (extra for rolling)

Instructions

Prepare the Dates

  • If dates are firm, soak them in warm water for 5 minutes, then drain. This helps blend into a smooth, fudgy texture.

Blend the Base

  • Add chickpeas, dates, peanut butter, agave, cocoa powder, and salt into a food processor. Blend until the mixture becomes thick and sticky, similar to brownie batter.

Add Peanuts

  • Add the ½ cup dry roasted peanuts and pulse until roughly chopped. Don’t over-process — you want small crunchy pieces for texture.

Chill the Mixture

  • Place the dough in the refrigerator for 10 minutes. This makes rolling easier.

Form the Truffles

  • Scoop about 1 tablespoon of mixture at a time and roll into smooth balls.

Coat (Optional)

  • Roll the truffles in crushed peanuts, shredded coconut, cocoa powder, or chia seeds.

Serve or Store

  • Enjoy immediately or refrigerate until firm. These taste even better after an hour in the fridge.

Notes

Tips & Variations

  • Soy-free option: Ensure chickpeas are soy-free (most are).
  • Add chocolate chips: Mini dark chocolate chips add extra richness.
  • Make them nut-free: Swap peanut butter for tahini + coat in oats instead of nuts.
  • Boost protein: Add 1 scoop chocolate protein powder (add 1 tsp water if too dry).
  • Swap agave: Honey or maple syrup works perfectly too.

Storage

  • Fridge: Up to 7 days in an airtight container
  • Freezer: Up to 2 months — thaw 10 minutes before eating
  • Room Temp: 1–2 days (best chilled)
