Notes

Tips & Variations

  • Vegetarian Option: Swap chicken for crispy tofu or double the chickpeas.
  • Add Grains: Include quinoa, farro, or brown rice for extra fuel.
  • Switch Dressings: Try a tahini lemon or spicy hummus dressing.
  • Make It Spicy: Add chili flakes or sliced jalapeños.

Storage

  • Refrigerator: Store components separately for best freshness: grilled chicken (up to 3 days), boiled eggs (up to 1 week), roasted chickpeas (up to 4 days), dressing (up to 4 days), and chopped vegetables (1–2 days).
  • Assembled Bowl: Assemble only before serving to avoid soggy greens and avocado browning. Best eaten immediately.
  • Freezing: Not recommended for assembled bowls or fresh vegetables; cooked chicken can be frozen (up to 3 months) before assembly.
  • Avocado Tips: If storing sliced avocado, sprinkle with lemon juice and wrap tightly with plastic wrap to slow browning.
