Ingredients

  • 1 thick slice of bread sourdough or country bread preferred
  • 1 tablespoon butter or olive oil
  • 1 cup fresh spinach
  • 1 slice beef ham
  • 1 –2 slices cheese cheddar, mozzarella, or Swiss
  • 1 egg
  • Salt and black pepper to taste
  • Pinch of dried or fresh thyme
  • Optional: chili flakes sliced green onions

Instructions

  • Toast the bread: Heat butter or olive oil in a skillet. Add the bread slice and toast on both sides until golden and crisp.
  • Sauté the spinach: In the same pan, add the spinach and cook for 1–2 minutes until wilted. Season lightly with salt and pepper.
  • Warm the ham: Add the slice of beef ham to the pan for 20–30 seconds per side until lightly browned.
  • Assemble the base: Place the toasted bread on a plate. Layer the spinach, then the ham, and top with cheese.
  • Melt the cheese: Return the toast to the pan and cover with a lid for 1–2 minutes until the cheese melts.
  • Fry the egg: In a separate small pan, fry an egg sunny-side up until whites are set and edges turn crispy.
  • Finish the toast: Place the fried egg on top and season with thyme, salt, and black pepper.
  • Serve immediately: Enjoy while hot and crispy.

Notes

Tips & Variations

  • Cheese options: Try mozzarella for stretch, Swiss for nuttiness, or cheddar for sharpness.
  • Add veggies: Sautéed mushrooms, caramelized onions, or grilled tomatoes make great additions.
  • Make it spicy: Add chili flakes or a drizzle of chili oil on top.
  • Protein swaps: Use smoked turkey slices, grilled chicken strips, or skip the meat and double the greens.
  • To make it vegetarian: Omit the ham and add roasted peppers or extra sautéed vegetables.

Storage

  • This toast is best enjoyed immediately.
  • If you need to prep ahead, keep toppings (spinach, ham, cheese) cooked and refrigerated for up to 2 days. Assemble and fry the egg fresh before serving.
