- 4 boneless skinless chicken breasts
- 4 tbsp unsalted butter softened
- 3 garlic cloves minced
- 2 tbsp fresh parsley chopped
- 1 tbsp fresh rosemary chopped (plus sprigs for garnish)
- 1 tbsp fresh thyme chopped
- 1 tbsp olive oil
- Juice of 1 lemon
- 1 tsp salt
- ½ tsp black pepper
Make the Herb Butter: In a small bowl, combine softened butter, garlic, parsley, rosemary, and thyme. Mix until smooth and set aside.
Prepare the Chicken: Pat chicken dry with paper towels. Drizzle with olive oil, lemon juice, salt, and pepper.
Optional – Butter Under the Skin: For extra juiciness, lift a small section of the chicken surface and spread a spoonful of herb butter underneath.
Grill: Preheat grill to medium-high. Grill chicken 6–7 minutes per side, or until internal temperature reaches 165°F (75°C).
Finish with Butter: While hot, spread remaining herb butter over the chicken so it melts into the meat. Garnish with rosemary sprigs and serve.
