  • 1 baguette sliced and toasted
  • 1 cup whole-milk ricotta cheese
  • 1 tbsp honey optional
  • 6-8 fresh figs halved
  • 6-8 slices prosciutto
  • 1 cup arugula
  • ¼ cup crushed pistachios

  • Whip the ricotta: In a small bowl, combine ricotta with honey, salt, and pepper. Beat until smooth and creamy.
  • Assemble the crostini: Spread a generous layer of whipped ricotta over each toasted slice.
  • Top it off: Add a layer of prosciutto, a few arugula leaves, and fig halves.
  • Garnish: Sprinkle with crushed pistachios and drizzle with olive oil or honey for extra shine.
  • Serve immediately and enjoy while the bread is crisp and the figs are fresh!

Notes

Tips & Variations

Make it vegetarian: Skip the prosciutto and drizzle with balsamic glaze.
Add crunch: Toast pistachios lightly before sprinkling.
Use goat cheese: For a tangier flavor, substitute ricotta with whipped goat cheese.
Drizzle options: Try truffle honey or balsamic reduction for a gourmet touch.
Make ahead: Toast bread and whip ricotta up to 24 hours in advance; assemble just before serving.

Storage

Whipped ricotta: Store in an airtight container in the fridge for up to 3 days.
Toasted bread: Keep in a sealed bag at room temperature for 24 hours.
Fully assembled crostini: Best eaten fresh — the bread softens quickly once topped.
