Ingredients

Dough

  • 1 lb pizza dough store-bought or homemade
  • Flour for rolling

Filling

  • 1 cup pizza sauce or marinara
  • 1½ cups shredded mozzarella cheese
  • ½ teaspoon Italian seasoning
  • Optional fillings: sliced mushrooms black olives, bell peppers, cooked vegetables, or cooked chicken

Topping

  • 1 tablespoon olive oil or melted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano or basil

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or place a cooling rack over a baking tray.
  • Prepare the dough: Lightly flour your surface and roll out the pizza dough. Cut it into equal rectangles or circles.
  • Fill the pockets: Spoon a small amount of pizza sauce onto one side of each piece of dough. Add mozzarella cheese, Italian seasoning, and any optional fillings.
  • Seal: Fold the dough over the filling to create a pocket. Pinch the edges firmly to seal, then crimp with a fork if desired.
  • Brush & season: Brush the tops with olive oil or melted butter, then sprinkle with garlic powder and dried herbs.
  • Bake: Bake for 15–18 minutes, or until the pizza pockets are golden brown and puffed.
  • Cool slightly & serve: Let rest for 5 minutes before serving so the cheese sets slightly inside.
