Ingredients

  • 10 –12 rice paper sheets
  • 1 cup crab meat or imitation crab shredded
  • 3 tablespoons cream cheese softened
  • 2 tablespoons mayonnaise
  • 1 green onion finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika optional
  • Salt and black pepper to taste
  • Oil for pan-frying avocado, canola, or olive oil

Instructions

  • Make the filling: In a bowl, combine crab meat, cream cheese, mayonnaise, lemon juice, green onion, garlic powder, smoked paprika, salt, and pepper. Mix until smooth and creamy.
  • Soften rice paper: Dip one rice paper sheet into warm water for 3–4 seconds. Lay it flat on a clean surface until slightly pliable.
  • Fill and roll: Spoon 2–3 tablespoons of filling near one edge. Fold in the sides, then roll tightly like a spring roll.
  • Pan-fry: Heat a thin layer of oil in a skillet over medium heat. Fry rolls for 2–3 minutes per side until golden and crispy.
  • Serve hot: Remove from pan, drain briefly on paper towels, and serve immediately with your favorite dipping sauces.

Notes

Tips & Variations

  • Extra crispy: Double-wrap each roll using two rice paper sheets.
  • Spicy version: Add chili flakes or hot sauce to the filling.
  • Air fryer option: Spray lightly with oil and cook at 380°F (190°C) for 8–10 minutes, turning once.
  • Veggie boost: Add finely grated carrot, cabbage, or bell pepper.
  • Alternative seafood: Finely chopped shrimp works beautifully in place of crab.

Storage

  • Refrigerator: Store cooked rolls for up to 2 days.
  • Freezing: Not recommended after cooking, as rice paper loses its crisp texture.
  • Reheating: Reheat in the oven or air fryer at 350°F (175°C) for 5–7 minutes until crispy again.
