Ingredients

  • 1 lb 450g white fish fillets (cod, tilapia, or halibut), cut into chunks
  • 1 tbsp coconut oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp red Thai curry paste
  • 1 14 oz can full-fat coconut milk
  • 2 cups fish or chicken broth
  • 1 tbsp fish sauce or soy sauce for a vegan version
  • 1 tbsp lime juice plus extra for serving
  • 1 red chili chopped (adjust to taste)
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • Sauté aromatics: In a large pot, heat coconut oil over medium heat. Add onion, garlic, and ginger. Cook for 2–3 minutes until fragrant.
  • Add curry paste: Stir in red curry paste and cook for another 1–2 minutes to release its flavor.
  • Add liquids: Pour in coconut milk and broth. Stir to combine and bring to a gentle simmer.
  • Season: Stir in fish sauce and lime juice. Simmer for 5 minutes.
  • Cook the fish: Gently add fish pieces. Simmer for 7–10 minutes until the fish is opaque and flakes easily.
  • Adjust & serve: Taste and adjust seasoning with salt, chili, or lime juice. Serve hot, topped with cilantro, fresh chili, and lime wedges.

Tips & Variations

Creamier texture: Use full-fat coconut milk.
Add veggies: Toss in baby spinach, mushrooms, or bell peppers.
Switch proteins: Try shrimp, scallops, or tofu instead of fish.
Add noodles: Rice noodles or glass noodles make it heartier.
Make it spicier: Add more curry paste or an extra chili kick.

Storage

Fridge: Store leftovers in an airtight container for up to 3 days.
Freezer: Freeze for up to 2 months (note: fish texture may slightly change).
Reheat: Warm gently on the stove — avoid boiling to keep the fish tender.
