Ingredients

For the Lettuce Cups

  • 4 –6 large romaine or butter lettuce leaves
  • 6 eggs
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1/3 cup crumbled cheese feta, blue cheese, or goat cheese
  • 1 cup cherry tomatoes halved
  • 6 –8 crispy beef strips smoked beef or beef bacon

Optional Add-Ins

  • Chopped chives or green onions
  • A drizzle of lemon juice
  • Red pepper flakes
  • Fresh herbs like dill or parsley
  • Avocado slices

Instructions

  • Prepare the lettuce cups: Rinse the lettuce leaves and pat them completely dry. Arrange them on a serving platter so they’re ready to fill.
  • Cook the beef strips: Pan-fry the beef strips until crisp and golden, then set aside on a plate.
  • Make the scrambled eggs: Whisk the eggs with salt and pepper. Melt the butter in a nonstick skillet over medium-low heat. Add the eggs and cook gently, stirring slowly, until soft and creamy.
  • Assemble the cups: Spoon the warm scrambled eggs into the lettuce leaves.
  • Finish with toppings: Add crumbled cheese, cherry tomatoes, and crispy beef strips. Sprinkle freshly ground black pepper or herbs if desired.
  • Serve immediately: These lettuce cups are best enjoyed fresh for maximum crispness.

Notes

Tips & Variations

  • Add avocado slices for extra creaminess.
  • Sprinkle chili flakes for a bit of heat.
  • Use goat cheese for a tangier flavor profile.
  • Swap beef strips for grilled chicken pieces if you want a more substantial protein.
  • Add diced cucumbers or sliced radishes for more crunch.

Storage

For best texture, assemble the lettuce cups only when ready to eat. However, the components can be stored separately:
  • Scrambled eggs: up to 2 days in the refrigerator
  • Lettuce leaves: 3 days if kept dry and unwashed until use
  • Cherry tomatoes: 3–4 days
  • Beef strips: 3–4 days, re-crisp in a pan before serving
  • Assembled cups should not be stored as the lettuce will wilt.
