Notes

Tips & Variations

Extra creamy: Blend only half the soup for a thicker texture.
Add greens: Stir in spinach or kale for color and nutrients.
Spice it up: Try smoked paprika, chili flakes, or coriander.
Coconut twist: Add a splash of coconut milk for richness.
Bright finish: A squeeze of lemon before serving enhances the flavor.

Storage

Refrigerator: Store leftovers in an airtight container for 4–5 days. Reheat on the stove and add a splash of water or vegetable broth if the soup has thickened.
Freezer: Let the soup cool completely, then transfer to a freezer-safe container. Keep for up to 3 months. Thaw in the fridge overnight and reheat gently, adding water or broth as needed.
Garnishes: Store fresh herbs separately and add just before serving to maintain brightness and flavor.
