Ingredients

  • 1 pizza dough store-bought or homemade
  • 1 cup shredded mozzarella cheese low-moisture
  • ½ cup ricotta cheese
  • 2 cups fresh spinach raw or lightly sautéed
  • 4 –5 garlic cloves thinly sliced or roasted
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: grated Parmesan red pepper flakes, fresh basil

Instructions

  • Preheat oven: Heat oven to 475°F (245°C). Place a pizza stone or inverted baking sheet inside to heat.
  • Prepare dough: Roll out pizza dough on parchment paper into a thin round or rectangle.
  • Add garlic base: Brush olive oil evenly over the dough and scatter garlic slices across the surface.
  • Add cheeses: Sprinkle mozzarella evenly, then spoon ricotta in small dollops over the pizza.
  • Top with spinach: Distribute spinach evenly. Season with salt and black pepper.
  • Bake: Transfer pizza (with parchment) onto the hot stone or baking sheet. Bake for 10–14 minutes until the crust is golden and cheese is bubbly.
  • Finish & serve: Remove from oven and finish with Parmesan, fresh basil, or red pepper flakes if desired. Slice and serve hot.

Notes

Tips & Variations

  • Roasted garlic: Roast garlic first for a sweeter, milder flavor.
  • Extra veggies: Add mushrooms, caramelized onions, or artichokes.
  • Cheese swap: Replace ricotta with mascarpone or cream cheese for extra richness.
  • Fresh finish: A touch of lemon zest after baking brightens the flavors.
  • Spicy kick: Add chili flakes or cracked chili oil before serving.

Storage

  • Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or a skillet to keep the crust crisp.
  • Freezing is not recommended, as ricotta can become watery when reheated.
