  • ½ cup caramel sauce homemade or store-bought
  • 3 tbsp mascarpone or cream cheese optional for added stability
  • 1 tsp vanilla extract
  • Pinch of salt

For the Garnish

  • Small dots of berry gel raspberry jam, or fruit coulis
  • Sugar leaves mint leaves, or edible greenery

Instructions

  • Prepare the Pastry Layers
  • Preheat oven to 400°F (200°C). Cut the puff pastry sheet into neat rectangles. Place them on a lined baking tray, brush with egg wash, and sprinkle lightly with sugar. Bake 12–15 minutes until golden and crisp. Cool completely, then gently press the tops if you prefer a flatter shape.
  • Make the Caramel Cream
  • Beat cold heavy cream to soft peaks. Add caramel sauce, mascarpone, vanilla, and salt. Beat again until thick, smooth, and pipeable. Transfer to a piping bag fitted with a large star tip.
  • Assemble
  • Layer two pastry rectangles with a thin spread of caramel or pastry cream between them. Pipe decorative caramel cream swirls on top. Add small dots of berry gel and a tiny sugar or mint leaf to each swirl. Keep chilled until serving.

Notes

Tips

  • Chill the mixing bowl and cream for faster whipping.
  • Do not overbeat or the cream will turn grainy.
  • Allow pastry to cool completely before piping the cream.
  • Use mascarpone for a more stable cream, especially in warm weather.

Variations

  • Chocolate: Add 2 tbsp cocoa powder to the cream.
  • Fruit: Add sliced fresh berries or a layer of berry compote between pastry sheets.
  • Nutty: Sprinkle crushed pistachios or almonds on top.
  • Salted Caramel: Finish with a light pinch of flaky sea salt

Storage

  • Refrigerate assembled pastries: Store the finished Caramel Cream Puff Pastry Squares in an airtight container in the refrigerator for up to 2 days. They are best enjoyed within 24 hours for optimal crispness.
  • Store components separately (best method):
    • Puff pastry layers: Keep at room temperature in a sealed container for up to 2 days.
    • Caramel cream: Refrigerate in a piping bag or airtight bowl for up to 48 hours.
Assemble just before serving to maintain the flakiest texture.
  • Avoid freezing assembled pastries: The cream does not thaw well and becomes grainy.
  • Freezing baked pastry only: Baked puff pastry layers freeze well for up to 1 month. Thaw at room temperature and assemble fresh.
  • Keep away from heat or sunlight: Warm temperatures soften the cream and reduce the pastry’s crispness.
