- 4 cod fillets about 150 g / 5 oz each
- 1 tbsp olive oil or coconut oil
- 3 garlic cloves minced
- 1 cup 240 ml full-fat coconut milk
- Zest of 1 lime
- Juice of 1 lime
- ½ tsp paprika
- ½ tsp ground cumin optional
- Salt and black pepper to taste
- Chili flakes optional
- Fresh cilantro or parsley for garnish
- Lime wedges for serving
Season the cod: Pat the cod fillets dry with paper towels. Season both sides with salt, black pepper, paprika, and cumin if using.
Sear the fish: Heat the oil in a large skillet over medium heat. Sear the cod for 2–3 minutes per side until lightly golden. Remove from the pan and set aside.
Make the sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the coconut milk, lime zest, and lime juice. Stir and let the sauce gently simmer for 2 minutes.
Finish cooking: Return the cod to the skillet. Spoon the sauce over the fish and simmer gently for 3–5 minutes, until the cod is opaque and flakes easily.
Garnish and serve: Sprinkle with fresh herbs and chili flakes if desired. Serve immediately with lime wedges on the side
Tips & Variations
- Fish swaps: Salmon, halibut, or tilapia work beautifully in this sauce.
- Extra veggies: Add baby spinach, zucchini ribbons, or cherry tomatoes during the last few minutes of cooking.
- More heat: Stir in chili oil or a small spoon of curry paste for a bolder flavor.
- Lighter version: Use light coconut milk, knowing the sauce will be slightly thinner.
- Flavor boost: A small amount of freshly grated ginger adds brightness and depth.
Storage
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Reheat gently on the stovetop over low heat, adding a splash of coconut milk if needed.
- Avoid boiling to keep the fish tender.
